Kolonist is a distinguished Ukrainian producer of premium wines. The winery was founded in 2005 by the Plachkov family in Danubian Bessarabia, Odesa region, where winemaking is a family tradition and a tribute to their historical heritage. The Bashta port wine has a rich aroma with dominant notes of dark chocolate, prunes, raisins, and spices. Its taste is harmonious, with soft tannins, prominent notes of dried cherries and currants, and a long fruity finish. This mature wine pairs perfectly with dark chocolate and aged cheeses — and now, with coffee! The love story between Yoko and Kolonist has been going on for years, and this is already their third collaborative creation.
We received a barrel previously used for this port wine, filled it with washed Colombian coffee, and left it inside for three weeks, stirring regularly. After three weeks, the coffee was removed and left for another week in sealed GrainPro bags for stabilization. As a result, the washed Colombian coffee retained its bright acidity, which, under the influence of barrel aging, transformed into notes of black currant. The overall flavor profile became rich with hints of dried banana, prunes, raisins, and a distinct aftertaste of sweet red wine. And when better to enjoy this coffee than now? Whether on misty autumn mornings or cool evenings — this coffee feels just right and deeply comforting.
